Mead Details
This mead was a fun project. This was made with Mexican Avocado blossom honey. After fermentation we aged it in the barrel that held our Pecan Daddy mead. A Pecan praline inspired mead. After 5 months we pulled it and put it right in a fresh dumped Detroit City bourbon barrel. Where it sat for a year. I total this mead is approximately 20 months old before bottling.
The yeast we used was D47.
Karl’s tasting notes
Now this mead is a genuine surprise! Unknown and dwelling deep in the meadery’s depths, waiting until now. Fans of Maniacal will rejoice with this 20-month-old (by our standards) mead! Sitting in the rather iconic “Pecan Daddy” barrel (if you know, you know). I’m certain that even new bloods will join the celebration soon, too! I’ve personally seen this barrel of avocado blossom haunting the aging shelf, but I’m so glad I knew not its destiny until now! Let’s dive in!!
My body is ready. The first impression of the nose is the rich honey, but an overwhelming penetration of sweet pecan. The Pecan Daddy stirs within this dark honey mead! Further enjoyment includes notes from the honey but more importantly the barrel, barrel, barrel. Not too much whiskey, but don’t mistake this statement for a lack of profile! If I’m so bold to say that the impeccable nose, delicious as it is, will not compare to the flavor journey I’m about to embark on!
Wow.
Just wow. A smooth, sweet honey-pecan with a profile of wood and whiskey! Like a sweet honey barrel bourbon! The avocado blossom melds into the pecan and maple notes from the Daddy (first time saying that sentence) and transforms under waves of bourbon goodness. The honey says hello before giving you a respectable tour of BOTH barrels it aged in. All the sweetness of Pecan Daddy and that smooth bourbon barrel finish should hopefully make the Detroit City Distillers nod with respectful approval. This mead is complex, balanced, and made for the whiskey and mead enthusiast alike!
