Mead Details 

​At Maniacal, we’ve always believed in using every tool in the shed. For this release, we surrendered the reins to the World Wide Web. We asked AI to formulate its perfect recipe—from the specific Gallberry and Apple Blossom honeys down to the weight of the apricots and the label art itself. Every single aspect of this recipe that AI created was followed through 100%. 

​It was an experiment born out of curiosity (and maybe a little bit of spite), but the result is undeniably human. A complex, vibrant mead that proves even a robot knows a good fermentation when it sees one. We’ve become the robots, and we’re okay with that. 🙂

This mead was made using Gallberry Honey, Apple Blossom Honey, and some local wildflower honey. We then added a ridiculous amount of Apricots for that fresh fruit flavor profile. 

The yeast it recommended for us was 71B.

This mead was approximately 1 year old before bottling.

Ah, yes, Generative Apiary. This is one of those special meads. One that shows up on our Tasting Room menu, is thoroughly enjoyed, and then ends up as a much-appreciated surprise bottle! This simple apricot mead was enjoyed by me and the masses for every drop of its -admittedly brief- existence! What I enjoyed the most is its heavy honey profile, allowing one to consider it “Traditional” styled, but with enough fruit to add an extra bit of fun. Let’s see how the bottle fares!

The first impression of the nose is a deep, rich honey nectar. Full-bodied and sweet. The apricot has a sweet, floral-fruit undertone to a musky honey promise. Not much more to say! As you open it up you get deeper honey notes and the apricot too; this mead really and simply wears its heart in its sleeve, however!

A nostalgic first sip hits me with that sweet golden honey sweetness, followed by notes from the apple blossom honey and finished off with that fuzzy-sweet stone fruit of apricot. One sip and this mead tells you all that it is! Each sip is a joyous cascade of full honey and fruit-balanced goodness. Generative Apiary continues to be easygoing, sweet, and a solid yet simple mead that those with a palette for the sweeter may certainly enjoy. Come for the honey, stay for the apricot.
