Mead Details:

This mead was made using Premium California Coriander Golden Reserve Varietal Honey. 

Notes from the supplier- Hints of cardamom and gingerbread are the savory notes of our complex Coriander Blossom Varietal Honey. This unusual honey is collected in Northern California’s Sacramento Valley. The flavorful finish is earthy with a hint of fresh lime peel, a unique flavor found in honey varietals. 

 

The yeast DV10 was used.

 

This mead was aged for 9 months until bottled.

Coriandrum:

One can tell that this coriander honey traditional mead will be special merely from pouring it and seeing its lovely amber-brown hues. Its rich honey appearance is only dwarfed in introduction to the nose: A equally rich aroma of earthy-sweet cacophony within a toasty honey scent, ending with a nearly herbal “spice”. The original coriander plant shan’t be ignored even when reduced to a form of delicious honey, it seems! 

 

Moving onto the taste, an immediate and gratifying sweet smoothness is to be noted; not cloying and thereafter accompanied by a truly impressive flavor profile that will indeed require another sip to fully decipher! For starters, even the floral plant notes are accompanied by flavors one would assume from a whiskey barrel versus honey! Semi-wood tones, subtle herbal spice, rich honey and even a hint of sweet melon can be gleamed. Where one sip gives fruity sweetness with woody heat, the next is honey and herbal spice. Overall a fascinating experience of a traditional style mead. The honey paints quite a picture with every sip.
