Mead Details

We gathered wildflower honey from 6 different local bee keepers.  Heffernans wildflower,  Livingston.   Flannery Ridge wildflower,  Monroe.   Jacob’s Fresh Farm Wildflower, Washtenaw.   Laura’s Apiary Wildflower,  Ypsilanti.   Shoreline Honey Farm Wildflower,  Oceana County.   Miller family farm wildflower,  Monroe. 

This mead is approximately 20 months old before bottling. 

The yeast we used was K1-V1116 

 

Karl’s Tasting Notes

We behold now a foundational and classic mead, the 6 Points. Many of those who lovingly haunted our Tasting Room for the past year should recall this mead! Combining all of our locally sourced Michigan wildflower honeys, this “sextuple traditional” is the pure expression of our local beekeepers, woven together into a mead that intrigues the honey lover adepts and novices alike. This mead has also been a foundation for several other experimental or draft meads in the Tasting Room!

The nose on the 6 Points is quite vast, as one might expect from 6 types of honey blended together. However, the initial note is more regarding the profile! You can tell just by the nose that the 6 Points is not a massively sweet mead. One could really break down the many notes of each wildflower that’s appearing in this mead. From floral pollens to the scent of goldenrod and catmint. Clover to thistle. The 6 Points may just smell like a “semi-sweet mead” to most, and where’s the harm in that? An experienced honey/mead enjoyer, however, can enjoy placing all of the subtle notes woven within this mead!

Now, the taste: the first sip is a delicate sweet wave of light honey. Due to its drier nature (by standards of honey), you can taste a rustic profile of the mead itself. It emphasizes the many notes from many types of honey. One sip isnt enough to fully grasp the profile! As you go in deeper, you can pick out subtle notes, sweet esters, to leathery licks, a wave of floral with a blooming flower’s pollen. All of this chaotic blend creates a cacophony of honey flavor that is never cloying or too dry. This mead hits without overdoing it
