So here we are again. The infamous BA Serpent’s Deed
We always have fun making this one.
For this batch, we used local Ypsilanti Wildflower honey, Local H&H Maple syrup, and Michigan Northern Spy Apples.
We then put it in a fresh, dumped Detroit City Distillery Maple Rye barrel. So, before DCD put their Rye in it, it was filled with local maple syrup.
It aged for about 9 months. After that, we start adding the goods.
For this batch, we added 3 different types of Cinnamon
The three main commercial varieties of cinnamon widely sold globally are Ceylon (true cinnamon), Saigon (Vietnamese cinnamon), and Korintje (Indonesian cinnamon). (Saigon and Korintje are specific types under the broader category of Cassia cinnamon)
We then added some Pompona Madagascar Vanilla Beans, apple pie spices, and some lactose sugar.
This mead was about 2 years old before bottling.

Back from the aeons and legends of favored meads of Maniacal’s past, the Serpent’s Deed rears its head again! The second batch of our Barrel Aged version of a beloved apple pie mead. Arguably, the greatest version and a very welcome mead for me to analyze! We begin!
Starting off with that nose! Oh yeah….. that’s some nostalgia. An identical profile so far!! A rich, sweet caramel apple scent right off the bat. Apple pie spices ripple in the background as this lush bouquet is taken in. As the Deed is an apple pie bochet (caramelized honey), I can tell that delightful caramel is in fact the honey blending with the sweet apple notes. This is a delicious scent; each bout of opening it up reveals a deeper, juicier apple that BEGS to be tasted.
Oof, that first taste. Now the barrel comes. The nose would suggest overbearing sweetness? Not so. While even the first sip is a sweet symphony of apple, honey, and spices, the real player is the semi-sweet tannic wood notes that make one remember this is barrel-aged after all! It cools off the candy sweetness and mellows the Deed into a familiar yet new profile. That was one sip, wait one! As I enjoy further, I can assure you this is just like old times. A gorgeous Fall profile of apple pie, honey, and barrel. The wood tannins actually uplift the apple pie spices, giving each sip a larger emphasis on them! Not much else needs to be said here. The BA Serpent’s Deed is back, and it’s still one helluva temptation! Enjoy
