Mead Details
This was a fun experiment. We caramelized Mesquite honey, Local H&H Maple Syrup, along with local Apple Cider all together. After that we added more apple cider to top it off and started the fermentation process.
After 15 months, we added Black Mission Figs, Black Walnuts and bourbon soaked Oak chips. This mead was a year and a half old before we bottled it.
The yeast we used was EC1118

Noble Harvest
Ushering in the fall weather is our long sought third, of four, Final Gravity Society Member’s bottle! This was a fun one to experience as I got to blind test this batch well before this tasting. I’m excited to see how it’ll be different! The Noble Harvest sports a ton of autumnal vibes, from cider, bourbon soaked oak chips, and maple syrup to more homey ingredients like the walnuts and figs. Before my final thoughts to follow, I’m sure this mead will be a welcomed addition as number Three!
First, as always, the nose: Not what I was expecting!! The walnut of all things is the forefront profile on my first glance at the nose! I got a blend of honey-sweet that was deftly dominated by a fruity walnut and a woody note. Yeah that is a sincere walnut flesh nose. The fig, woody bourbon, and caramelized notes from the honey BARELY peek in from under it! Very different!
Oooh, this is a very fascinating first sip. NOTHING like before and moreover a truly unique mead. The walnut is of course first, but its wall of profile quickly breaks under a wave of blended fall notes. I can still taste apple, fig and that unique mesquite honey flavor. Too much for my brain to track on a single sip! As I break it down, it’s that honey that really floors me. Under that walnut goodness is a heated honey’s whisper from the bourbon soaked oak chips that resonates with gentle fruit notes. All of this is balanced and harmonized by a second wave of walnut combined with a “savory” maple note. Unlike past fall meads, this Noble Harvest encapsulates a fantastic and surprising lineup of flavor that doesn’t rely on just sweet notes. Fantastic and bravo!
