For this mead we used Mexican Coffee Blossom honey.
This product will be around 6-7 months old before bottling. Also this was a 50gal batch.
We used K1-V1116 yeast.

Another traditional to overjoy my traditionalist leanings, and this one is another special one! Coffee Blossom honey. A honey that I’d wager most people haven’t tasted or let alone knew about in most cases. For me it has only been a bucket list honey and thus, I’m delighted to introduce the Miel de Café!
Getting that sweet, sweet nose first. My first impressions include that welcomed sweet honey scent, naturally, but even from this quick hit reveals a deeper near earthy note. Revealing less sweetness just from a sniff. Really appreciating the nose and there are notes of delicate florals alongside the earthy notes. Opening it up reveals a perfume-like sweetness that is as pseudo-shocking as the afore-metaphor fragrance.
Now, going in for the taste! Just as the nose revealed, no extremely sweet flavor on the first sip. A smooth, not cloying, honey taste with an almost coffee-bitter edge right at the end. More research is required. Continuing to enjoy this mead indeed offers a semi-sweet profile with ever so faint coffee notes, followed with sporadic bitters. The flavor is bright honey then earthy coffee bean, unroasted mind. Overall the Miel De Café is balanced, not too sweet, and not too much on the coffee end. This reveals just enough of both and is splendidly enjoyable.
