Mead Details-
This was the initial cider pressing, which happened mid-October 2023—using a variety of apples from Cross Village in Northern Michigan. It was made using ⅔ Mexican Orange Blossom honey and ⅓ West Michigan Wildflower honey. This was a 120gal batch. Half of this became Mexican Orange Blossom Appley, the other half became the Dreaming Tree you’re reading about here.
For Dreaming Tree, we added 1lb of fresh pureed ginger per gallon, for that sweet ginger spice.
The yeast used in this recipe was EC1118.
This mead is 10 months old before bottling.
The return of a ginger classic, now with a twist. Dreaming Tree has gotten a tasting profile makeover with our Mexican Orange Blossom version of Appley this time. While Dreaming Tree’s of old favored Midwest honeys this time we elected for a new approach; now we find out if it was the correct choice.
The nose hits with the pleasant apple and honey notes at the base. The distinct citrus notes that those familiar with orange blossom honey will recognize linger well into the overall experience. Not to be outshined, however, there is of course above all of that a prominent ginger note. A fresh, sharp note if fresh ginger with a wonderful citrus-honey backing? I can hardly wait.
With the first taste, I get that classic ginger-forward profile that previous Dreaming Tree’s boast, with a twist. A near-delicate honey citrus dances along a flavor profile of fresh cider, intertwined with that said ginger. Further tastes explore an intoxicating (no pun intended) experience of soft and sweet apple-honey flavors with an amazing sharpness of fresh pureed ginger. All of these notes come together to provide a classic autumn flavor with the gentlest caress of summer included!
