Mead Details-

 

This batch of Dreaming Tree is made from local ingredients. The cider came from Nemeths Farm in Milan. The honey came from our home in Ypsilanti. This was a 50-gallon batch, and we added about 40lbs of fresh pressed ginger to it. This was one of 3 batches that were all started at the same time to create our series of ginger cysers. 

The yeast used in this recipe was 71b.

This mead is 10 months old before bottling.

Next up to bat is an old old friend, the Dreaming Tree. The fifth batch of our favorite gingery mead is here and ready to grace the glasses of everyone by fall time. From its predecessors, the Dreaming Tree is the perfect Autumn mead, always hosting a direct “ginger forward” experience. Let’s see if numbah five is the same!

Ohhh yeah, that nose is exactly our Dreaming Tree. A sweet lullaby of ginger with soft notes of apple cider. Opening it up reveals more sweet fruit notes and a hint of honey, but intertwined with waiting ginger.

Going in and it’s a remarkably different experience! Still the Dreaming Tree I know and love, but smoother and less aggressively ginger. Here its a sweet ride of honey for a change, followed by a ginger-apple. Velvety smooth apple ginger, missing the before experience of prickly ginger spice. Now we have a grown up Dreaming Tree that is an impeccable blend of soothing ginger, sweet honey, and apple. I won’t have to warn that “you have to like ginger” anymore!
