Blueberry Bird 

 

Mead details:

You’ve asked for it, and now this mead is finally back. 

 

We make this delicious mead using hundreds of pounds of whole blueberries, and blueberry concentrate. Combined with local Wildflower honey from Dexter, Michigan. 

 

After fermentation is complete we let the mead age on the whole blueberries for a few months until we pull them out. We then grind them up, press them, and add the fermented juice back in.  

 

For this batch of Blueberry Bird, we wanted to do a fun experiment and try out a couple of different yeasts to compare flavors. We did 2 batches exactly the same with 2 different yeasts. One with K1-V116, and ICV-D47.

K1V

Scent: a deep blueberry floral/fruity nose, with a hint of light honey sweetness under it all

 

Taste: an immediate “warm” blueberry, silky smooth, and then the tannins roll over with a near spice berry wave of semi-dry blueberry goodness. Tangy, sweet, and fruity all throughout, with a bold and nearly dry profile that stays consistent with every sip.

 

D47

Scent: a more yeasty/bread-like start that mixes with a blueberry fruit smell. Not dissimilar to a blueberry muffin. A more tannic note in there too

 

Taste: immediately hits you with a semi-dry blueberry spice, where the spice is an eager debut of well-balanced tannins. Any hint of a yeast note implication from the nose is silenced by a decadent profile of warm blueberry fruit notes
